Il Journal of Food Science ha pubblicato recentemente un'interessante studio che dimostra come film edibili addizionati di antimicrobici, possano contribuire a inattivare batteri patogeni contaminanti prodotti a base di carne.
Questa ricerca potrebbe conferire all'imballaggio, definito in senso lato, un ruolo di primo piano rispetto alle problematiche inerenti la sicurezza degli alimenti. L'abstract tecnico della ricerca è disponibile al sito dell'USDA.
